White Chocolate Mousse

Deliciously easy for a romantic dinner. This mousse would go beautifully with some fruit to cut through the richness of the chocolate, why not try some pretty blood oranges, a seasonal speciality, with a sprinkling of pomegranate.

 

Ingredients: 

  • 150g of white chocolate
  • 3 eggs separated
 
Serves 4

Method:

1. Melt the white chocolate in a bowl over a pan of simmering water, stirring gently.

2. Beat the egg whites until stiff but not dry.

3. Stir the beaten egg yolks into the melted white chocolate – but be careful the white chocolate does not seize!

4. Fold in the egg whites until completely incorporated with the white chocolate and egg yolks.

5. Pour into shot glasses, martini glasses or any pretty bowl, and leave to set in the fridge.
